Triwing Industries makes a true trike kit for the V Star 1100. I haven't found any other trike kits other than theirs or the Voyager kits. http://www.triwing.com/index.htm

Trigg makes one and you can get a reverse with it. Tow Pac makes one but there seems to be a lot of bolts and the tires are small. These are all less than half the price of a true trike conversion. I love my 1100 and would like to have a bolt on so I can have the option of 2 wheels or not. It would definitely help me with the 2 up riding anymore.

2003 1100 Classic Silverado. 2" risers, Rifle bronze windshield, Cobra crash bars with highway pegs, Baron's ORK. DMY VIP Tour Pak with luggage rack. MCC Comfort Rider Plus passenger seat. No performance enhancers. Just comfort and safety.
