needing some info on adding bigger bars and wiring

I have a 2000, 1100 bobber. Im looking to put a set of 12" holey roller apes from road 6 custom on. I have priced a set of cables from a few different places. Do i order the cables to mach the height of the bars? For instance, 12" cables for 12" bars. Or do i need to order them a bit bigger in order to have a little slack to move around a bit easier? Also, most companies only supply the throttle,clutch,brake, and choke cables. Of course on most vstars, there are two other big sleeved wires. One on each side coming from your controls. On the left side, it seems to come from your turn signals and horn. On the right side, it seems to be from your shutoff switch and start button. They are in a thicker silver sleeve. My question involving those is, do i have to rewire and make them longer and sleeve them myself, or is there anyone who makes them longer and if so, what are those cables and lines called? Any help would be great. Thanks
