Cool Riding near Asheville for newbies

My wife and I are visiting our daughter in Asheville this summer. We are trailering the bikes from Michigan and plan on riding some of the great roads in that area. Thing is...we are both newbies, just started riding last summer, and a bit aprehensive about the twisty turnys we've been reading about. I have a V Star 1100 and my wife has a Honda Shadow.
We do well on the flat and straight of Michigan but the point is to get out and try something new. Any advice, suggestions, warnings or encouragement? Would the Dragon be biting off too much for our experience level?
By the way, I'm 64 and my wife is 66. Any advice is appreciated.

Welcome from Texas. With proper maintenance the V* will last forever. Make sure and click on link in my signature for some great tips on the V* . Can not help much for good rides there but anytime you are on your bike with you better half it's always going to be good. 😀
