Buy a Tritip or Santa Maria cut for those on the east coast. Cut as much fat as you can off the outside. Cut in two pieces with the grain thinking about the slices and put in the freezer for 30 or 40 minutes. Take one out and slice with the grain until it isn't easy to slice then put back in the freezer and take out the other one. Lay out parchment paper and lay out the meat season as you like, I use black pepper and very light chili powder. Roll up and put in ziplock bags for a couple of days. Preheat the oven to 200 degrees and put the meat on a rack and keep the oven door cracked open to dry instead of cook. 3 to 4 hours start checking after 3 hrs. When its done to your liking take out and bring to room temp. and ENJOY!
